7-layer, tostada dip, walking taco...whatever you call it, it's the ideal dip to bring to a BBQ or potluck. Layers of refried beans, spiced sour cream, guacamole, chopped lettuce, tomato, green onions and sprinkles of freshly grated cheddar and crumbled cotija for a salty treat. Add green chiles, jalapenos, or chopped olives to give it your own twist.
Ingredients:
1-2 cups refried beans (homemade for a delicious option)
1-2 cups guacamole (freshly made of course)
1 cup sour cream (mixed and chilled with seasoning blend of chili powder, paprika, cumin, onion and garlic powder, oregano and salt)*
1 cup chopped romaine lettuce
1 cup freshly shredded cheddar cheese (or pepper jack)*
1/2 cup crumbled cotija cheese*
1/2 cup chopped tomatoes
1/3 cup chopped green onions
Optional: chopped green chiles, jalapeno, black olives
Serve with tortilla chips
Directions:
On a large platter, spread each layer, starting with beans, guacamole, sour cream mix, lettuce, cheese, tomatoes and green onions
Chill until ready to serve with tortilla chips
* to make vegan, substitute vegan cream cheese for sour cream and vegan cheddar shreds and feta. You can also use traditional taco seasoning packet rather than making your own
