Sometimes known as cowboy caviar, this refreshing and easy to make dish serves well as a dip for tortilla chips or as a side salad. Try adding chopped avocado or crumbled cotija cheese for a twist.
Ingredients:
2 cups black beans, rinsed and drained (about 2 cans)
1 cup corn kernels, frozen or fresh
1/2 red bell pepper, chopped
1/2 cup cilantro leaves, chopped
2-3 green onions, chopped
Juice of 2 limes
2 T balsamic vinegar
1 t cumin, 1 t salt and 1/2 t black pepper
Directions:
Mix all ingredients in a bowl, let chill 30 minutes to infuse flavors
Serve with tortilla chips or as a side
