This is an easy dressing to drizzle over your bed of romaine, or kale, or whatever completes you. Although traditional Caesar dressings often include raw egg or anchovies, this is compatible for a vegetarian (and vegan!) diet, yet is delicious and satisfying.
Ingredients below is for a large amount of dressing to be refrigerated in a mason jar, or other tightly sealed container, and used over multiple salads- reduce amounts for one time use.
Ingredients:
1/2 cup mayo*
1 garlic clove, minced
1 juice of a 1/2 freshly squeezed lemon (about 1/4 cup)
1 t salt
1/2 t black pepper, freshly ground
1/2 cup olive oil
1 t Worchester sauce*
Directions:
1. Blend all ingredients- if available, use a mini food processor.
2. Adjust ingredients to desired flavors/consistency
3. Drizzle over washed, dried and chopped romaine, kale or other lettuce for salad. Add shredded parmesan and croutons for traditional Caesar salad and toss!
*Note #1: To keep vegan, use vegan mayo and vegan Worchester sauce (or sub with 1/2 soy sauce and 1/2 apple cider vinegar for Worchester)
