Three cheeses layered with lasagna noodles and a rich marinara sauce topped with a cheese layer browned to perfection. Make a homemade marinara sauce or noodles to kick it up a notch. Or keep prep to a minimum by using a quality store bought sauce and no boil noodles. Either way, you will have a delicious and decadent meal that can easily be prepared in advance.
Ingredients:
2 pounds fresh ricotta cheese
4 cups mozzarella cheese, crumbled or shredded, divided
1 cup shredded parmesan, divided
1/2 loose cup chopped fresh parsley, divided
1/2 loose cup freshly chopped basil, divided
salt and pepper
16-20 lasagna noodles (fresh or no boil)
4 cups your favorite marinara sauce
Directions:
Preheat over to 375 degrees
Combine ricotta with 3 cups mozzarella, 1/2 cup parmesan, 1/4 cup parsley and 1/4 cup basil, add salt and pepper to taste
In a deep 9x13 casserole pan, spread a layer of marinara sauce
Lay lasagna noodles to cover bottom layer- typically 4 noodles will suffice
Spread 1/3 of ricotta mix evenly over noodles
Repeat layering two additional times, noodles and 1/3 ricotta mix and end with a fourth layer of noodles
Pour remaining marinara sauce over the noodles and spread to ensure it covers all noodles
Top with remaining mozzarella and parmesan. Sprinkle basil and parmesan.
Cover with foil and bake in preheated oven on the center rack for 50 minutes and until filling is bubbling and noodles are soft
Uncover and let bake an additional 10 minutes, turn on broiler for last 2 minutes if prefer a browned cheese layer, but watch it closely to make sure it doesn't burn.
Let sit 10 minutes, cut into squares (about 8-12). Serve alongside Caesar salad and garlic bread
