Cucumber Salad


Crisp, refreshing. Use as a side for your poke bowl or ramen, or enjoy as a quick and delicious snack. If you have a mandolin slicer, this is the time to get it out to make perfect thin slices of cucumber- it is so satisfying.


Ingredients:

  • 3 Persian cucumbers

  • 1 cup rice vinegar *

  • 1/4 cup sugar

  • 1-2 T Sesame seeds




Directions:

  1. If possible, use a mandolin to thinly slice cucumbers into circles. If using a knife, do slowly as thin as possible.

  2. Heat rice vinegar on stove and bring to slow boil, stir in sugar to dissolve and remove from heat.

  3. Pour vinegar mix over cucumbers in a container that can be sealed. Add more vinegar to ensure cucumbers are completely covered by liquid.

  4. Store in refrigerator for at least 30 minutes, up to overnight.

  5. Sprinkle with sesame seeds just before serving

Note: If using seasoned rice vinegar, you can omit the sugar and heating step
