This is an easy but favorite autumn salad. Mixed greens tossed with a simple vinaigrette with slices of persimmons and avocado and feta and pomegranate seeds sprinkled on top. Add some candied walnuts or pecans for some additional crunch.
Ingredients:
6-8 cups fresh mixed greens
1 persimmons, slices in thin half moons
2 avocados, sliced
1/2 cup feta cheese, crumbled*
1/3 cup pomegranate seeds
1/2 candied walnuts or pecans, optional
Dressing:
1/2 cup olive oil
2 T freshly squeezed juice from an orange
1 T apple cider vinegar
1 T honey, or maple syrup*
Dash of salt and pepper
Directions:
Mix and shake salad dressing and store in fridge until ready to use
Lay mixed greens in large salad bowl, drizzle salad dressing and toss.
Carefully place slices of persimmon and avocado, alternating around perimeter of bowl
Sprinkle pom seeds, feta, and nuts
*omit or use vegan feta to keep vegan
