Liven up your breakfast or brunch with migas! Corn tortillas are fried along with onions and peppers and mixed with eggs for a filling meal. Top with cotija cheese, avocado and salsa for an extra kick.
Ingredients: (Serves 3)
2 T butter
1 T olive oil
1/2 onion, red or white, peeled and chopped
1/2 red pepper, seeded and chopped
3 corn tortillas, cut in strips
6 eggs, beaten
Spices: Salt, Pepper, Cumin, Chili Powder to taste
Toppings: Sliced avocado, cotija cheese crumbles, cilantro, salsa
Directions:
Heat butter and oil in a medium frying pan. Add onions and peppers and sauté for 5 minutes, until soft
Add corn tortilla strips, ensuring there is enough oil remaining to crisp them and sauté for 5 additional minutes
Pour in the egg mixture, adding spices as desired, cook until eggs are set, but slightly runny.
Serve hot with desired toppings
Variations: Add a chopped jalapeno pepper when sautéing onion and pepper, and top with shredded pepper jack cheese when eggs are cooking. Or fry tortillas separately for extra crunch.
