When chocolate and peanut butter team up, the result is amazing. These bars have been on my short easy-to-make dessert list for many years and will never be bumped.
INGREDIENTS
1/2 cup butter (or vegan butter if desired)
1/2 cup packed brown sugar
1 teaspoon vanilla extract
2 cups peanut butter
2 1/2 cups confectioners' sugar
2 cups semisweet chocolate chips
DIRECTIONS
Melt butter or vegan butter over low heat. Add sugars, peanut butter and vanilla. Mix well.
Press into a 9 x 13 inch in a greased or lined (with parchment paper) pan. Cool slightly.
Melt chocolate chips and spread over the top. Sprinkle kosher salt on top if desired.
Cool in refrigerator
When cool, remove from fridge to warm slight and cut carefully with a clean knife into squares or bars, as small as 1 x 1 inch, or larger depending on preference.
Notes: Store uneaten bars in refrigerator or freezer. Get non-dairy chocolate chips to keep vegan.
