Simple pleasures. This toast makes a tasty and quick breakfast, yet is fancy enough for brunch. Use small baguette slices and serve as bite size appetizers during cocktail hour. You can keep it easy or try a variety of topping to mix things up. You can't go wrong with any ricotta and bread pairing.
Ingredients:
Fresh ricotta
Sourdough bread (I love cracked wheat sourdough- from Trader Joe's or San Luis brand)
For Savory Toast:
Olive oil
Salt
Parsley
Options- add pesto, romesco sauce, or avocado, chopped hard boiled egg, or roasted tomatoes and sweet peppers and top with nuts or seeds, such as chopped pistachios, pine nuts, or sunflower seeds.
For Sweet Toast:
Honey
Sliced strawberries
Options- add mint, sub strawberries for other fruit such as raspberries, mango or banana. Consider topping with nuts or seeds, such as chopped glazed walnuts or sunflower seeds
Directions:
Toast sliced bread on both sides
For savory toast- drizzle olive oil on the open face toast, spoon on ricotta, sprinkle salt and parsley and additional toppings, if using
For sweet toast- spoon on ricotta on open face toast, place sliced strawberries and drizzle honey on top and additional toppings, if desired
