This simple noodle dish can be served hot or cold, is easily transportable for a potluck and can be enjoyed as a main course, or as a side. It uses linguini noodles, but you could sub spaghetti or other noodle. You can make it a more substantial dish by adding a protein, such as crispy tofu and by adding stir fry veggies. This was served along with crispy baked tofu, Asian peanut slaw, and blistered shishito peppers.
Ingredients:
1 package linguini noodles
For the sauce:
1/4 cup olive oil
1/3 cup sesame oil
1/2 cup honey, or agave or brown sugar for vegan option
1/2 cup soy, or tamari sauce
1 t red pepper flakes, or use the chili onion crunch from Trader Joe's, which is a great complement to many dishes
Toppings:
1/2 bunch chopped cilantro
3 green onions, chopped
1/2 cup chopped peanuts
1/3 cup toasted sesame seeds
Directions:
Cook noodles according to package directions.
While cooking noodles, mix sauce ingredients in a sauce pan and let simmer 5 minutes, stirring frequently to keep from sticking or browning
Pour sauce over noodles in large bowl.
Stir in the toppings. Serve warm, or refrigerate to serve as a cold salad.
