Guacamole is a must in our house. When I open a bright green, perfect avocado, I feel like I have won the lottery. If preparing a large batch for a dip, we may jazz it up with various peppers, spices, etc. But when making it quickly to top a taco or burrito, we keep it basic, which is "simply the best," according to my youngest daughter.
Ingredients:
1 ripe avocado
Juice of 1/2 lime
1 T chopped cilantro
Salt, approx 1 t*
Directions:
Mash avocado with all ingredients in a bowl. Simple, fresh, the best! Serve on a tostada, with chips, on a salad, or on a spoon!
*Note: I don't always measure here and I tend to go by my motto "you can never have too much salt"- at least for freshly made dishes- sprinkle it and add according to your refined tastes!
